Our favorite baking pan

I have been using this baking pan for about two months. This is a well-coated ceramic cookware and has quickly become our favorite pan for just about anything that can be cooked in a 13" x 9" pan. We have two other 13x9's (metal and clay) but we prefer these. I bought a nylon knife to avoid scratching the surface, but have found that I still have to use a regular knife when serving meat from this dish. Until I scratched. I don't think it's meant for frying, but I'd have to double-check. The color is very pretty and quite heavy/substantial. We fried vegetables in it and there was a lot of burned stuff on it at the end. We believe this was because coconut oil was used instead of our regular olive oil. My resourceful husband restored the pot to its original condition by scrubbing it thoroughly with a mixture of laundry soap and bath gel when nothing else worked. I hand washed it and then washed it in the dishwasher as usual and everything came back fine. It has been in the dishwasher (prewashed) after each use and it works great. The handles are an integral part of the pan, they are very handy and large enough to be picked up with an oven mitt. I'm a little hesitant to recommend it after a short period of use, but so far so good.
