I was concerned if this would work in the shallow depths of the liquids I normally measure (for confectionery R&D - sometimes as little as 0.5 inch deep) . it actually seems to work best when only the "bulb" is in the liquid. However, the temperature of boiling water has been measured up to 107 °C. This is a pretty big mistake. I tried to take photos but the camera kept floating. I'll see if I can get it to work by testing the caramelizing sugar (it starts browning immediately at 160C). One by one the thermometer didn't work for me - so hopefully this one will eventually float at a certain temperature. degree of accuracy. I will update my rating
