We have a secret recipe for carrot cake with orange and pineapple juice and a portion of pineapple pulp. It's a nightmare, the wet bits sticking to the pan. These silpats are perfect. We realized there were other brands at a lower price and went with the original Silpats brand. There is something special about the food you eat and we didn't want to risk introducing foreign substances into the food when cooking hot. China can use lead in its paints, so the risk is unknown.
