Review on Enhanced Kyocera Revolution Series Black Blade Paring and Santoku Knife Set for Superior Performance by Matt Woodward

Great knives if you know what you are buying

Most of the bad reviews about these knives relate to the ceramic knife technology, not this product. When buying a ceramic knife, like any other knife, you have to make compromises. Here's the breakdown: Stainless steel: + relatively sharp and rust resistant - dulls faster Carbon steel: + extremely sharp - rusts, dulls Ceramic: + very sharp and doesn't take much longer to sharpen than steel - brittle, requires special equipment to sharpen. That being said, yes, these knives are very sharp, but they will shatter or shatter completely if dropped, placed in and stacked on the sink, or used for prying. So it is a compromise with these knives and one should be aware that they require special care. When handled correctly, they remain razor-sharp for a very long time and do not have to straighten the steel. The blades are made in Japan but the handles are made in China and it shows. The handles are very crappy for such a cool blade, so a star.
