If you've never worked with a Kyocera ceramic knife before, you're in for a treat. Smooth and easy cutting. Long sharp. Leave those old carbon steel knives in your desk drawer; They will quickly become your favorite knives. Just don't drop them on a granite countertop or open anything with them - they'll break. My fourth set in 6 years. It's not the knife's fault, it's the woman's fault! Love her, take care of her, always impress with the edge. You have to understand that this is for slicing, slicing and dicing. Easy pairing. When cutting into bones, chop with them (press the blades from the side), rotate when cutting. Most of the bad reviews about these knives relate to the ceramic knife technology, not this product. When buying a ceramic knife, like any other knife, you have to make compromises. These knives exude sophistication and elegant looks. You almost question the idea of having a knife in your hand. Anyone looking to purchase these should keep in mind THESE ARE CERAMIC KNIVES. Sharp as the Devil in Santoku knives

Saw these knives online and thought they would be a great addition to my wife's knife set. These are two great knives from Kyocera, the world's leading ceramics company. I have been using their knives for over five years now since my brother gave me a set of white bladed ceramic knives.
