Review on Enhanced Kyocera Revolution Series Black Blade Paring and Santoku Knife Set for Superior Performance by Lance Harrison

Revainrating 5 out of 5

A beautiful knife set for collectors but not for those who love the kitchen

These knives exude sophistication and elegant looks. You almost question the idea of having a knife in your hand. Anyone looking to purchase these should keep in mind THESE ARE CERAMIC KNIVES. If you don't know anything about ceramics, they're insanely sharp. Unlike traditional steel knives, they hold the blade through a micro-fissuring process that gradually causes the blade to chip during use, keeping the knife sharp. It also causes his biggest downfall, which is inflexibility. Ceramic knives don't bend like regular steel, they break and crumble like a piece of hard plastic under pressure. These knives CANNOT be used to cut dense materials such as cheese and are not suitable for cutting bones in meat as the knife may snap or break on contact with bones. the care you need to take when using these knives. Ceramic knives are some of the sharpest knives you will have, and those who don't know how to use a kitchen knife properly should not use them. I've seen trained professionals make mistakes and accidentally cut off their fingertips like a hot knife cuts butter.
