Fantastic knives -- Much better than steel -- A great gift

These are two great knives from Kyocera, the world's leading ceramics company. I have been using their knives for over five years now since my brother gave me a set of white bladed ceramic knives. I've now turned my attention to ceramic knives, which will never return to steel knives, and I preach their merits to all who will hear. My brother's old Kyocera knives still work, but I wanted to upgrade to stronger, black-bladed knives. At $61.50, only 50 cents more than the white blade version and over $25 cheaper than buying the paring knife and santoku separately, this is a great deal. The knives are nicely packaged in a box with a little red tape securing the knives to the black foam protector. These knives are the perfect gift for the home cook or gourmet. Made from ceramic, the santoku and paring knife are very, very sharp and will most likely never need sharpening. You won't believe how easy these knives are to cut and sharpen. The Santoku is very comfortable to hold and has a good balance. Most likely, it will become your most used knife in the kitchen, your "right hand" so to speak. Resin handles are comfortable to hold and provide a good grip. One caveat I would like to mention about these knives is that as with all ceramic knives, the blade is brittle to some degree. Not fragile in the sense that you don't have to worry about damaging it during normal use; not at all. No, I mean fragile in the sense that if you drop it on the kitchen floor it could very well break or shatter depending on how it lands. I recommend knives with a black blade (as opposed to knives with a white blade) because they undergo a special treatment that makes the blade harder and more resistant to chipping than white ones. For the slightly higher price, I think the extra durability is worth it. But in any case you get a great knife that will make a very useful addition to your knife collection. If you treat them with care, they will serve you and bring you joy for many years. Note that if your knife blade has minor chips (which usually don't have a noticeable impact on performance) you can send it back to Kyocera and they will resharpen all your knives (however many you have) for $10. Pay only $10 and get one-way shipping. As always, store your ceramic knife in the knife block after use, not in the drawer. And only use them with wooden or plastic cutting boards.
