I bought these thinking they would be a good substitute for parchment paper but they aren't. I'm used to removing baked cookies or buns from the oven and laying them on parchment paper on a cool surface to begin cooling. These silpats are non-slip and too hot to touch with bare fingers, so you can't take them out of the pan right away. Trying to grab them and remove them from the pan is awkward with oven mitts. They're not the same size as my baking sheets, they're a bit smaller, so I can't make as many cookies as I can by covering the entire sheet with parchment paper that I can cut to size. Trying to wash them is like trying to wash wet pasta, but if you empty the sink and put them on the floor, they're easy to clean. They clean up well. Then you need a surface to lay them on to dry. Also, I noticed a slight difference in the bottom of the cookies and cinnamon rolls on the silpat and parchment paper. The bottom wasn't as crispy when cooked on silpat. If all of this works for you then there is nothing wrong with them, they are doing their job. they just don't do it the way i want. I'm going back to parchment paper.
