I have this Silpat and two different sizes; Although it costs a lot less, I like it a lot better - I'm ordering two more. It just cleans with a tissue and I've had no sticking issues at all. Silpat is more difficult to peel, but can be used for things like rolling out dough that you want to cut. It's very thin and I would be concerned about cutting it. When you remove the last cookie or two, the sheet will slip a little, but that's the whole point of a nonstick surface, you don't have to worry about putting it on the right side. .I haven't had mine for a very long time so can't comment on durability but they are inexpensive and easy to replace. Worth noting: They look disposable, so be careful not to accidentally throw them in the trash!
