Very close to excellent --- but unfortunately still not a cigar

These scissors are primarily intended for the chef's meat/poultry scissors and they tick all the boxes except one; they don't work as well as intended. That's why; Effective shears rely on shearing action and where there is a gap between the cutting edges they will not cut materials equal to or less than that gap in thickness. These very good scissors have a design flaw; They are ground flat, and too much clearance is built in under the hinge pin cover, allowing the scissor blades to spread sufficiently over 1/3 of their length closest to the tip. Mine is wide enough that the scissors won't cut through plastic bags and chicken skin unless I spread the handles so the cut edges touch. Scissors must either have a Belleville spring under a hinged cap that causes the blades to make contact up to their tips, or they must be made with a very slight inward curvature to their cutting faces, creating a moving shear point as contact force increases through Twisting arises from tilting as they are used. bottom line; They don't work that well and I need to change them to make them work.
