Review on Yoshihiro Inox Stain-Resistant Aus-8 Steel Ice Hardened Petty Utility Knife Shitan Handle 6" (150Mm) by James Mayberry

Revainrating 5 out of 5

It's a great knife the edge retention is good enough for daily rigor!

I could tell you I'm a professional chef, I could compare this knife to a 1000 layer folded Damascus knife by orishi Ren or whoever the at guy was from kill bill. I could post my resume to vaidate my experience and knowledge. Instead I will assume you know that the knife is a molybdenum steel, I believe aus8. It's a great knife the edge retention is good enough for daily professional use. Remind yourself that you must sharpen the knife I was not keen on the blade edge out of the box. After a few passes on my stones, wow! This knife can take a razor edge and sharpens nicely. Understanding the metalurgy, weight of the knife due to japanese handle(light and nimble), all of these things relative to the price I give this knife five stars, and most yoshihiro products my backing.

Pros
  • Handle Bolster: Ebony Wood (BOLSTER COLOR -VARIES) /Handle Material: Octagonal Shaped Magnolia
Cons
  • Some users may find the price point of this knife to be higher than similar products on the market, making it less accessible to budget-conscious consumers
