I love my silicone baking mats!

I used parchment paper. No longer! How did I not get this before? I've got air baking sheets, Wilton baking sheets, cheap baking sheets, fancy computer controlled gas ovens. I'm still not getting the top notch results I should be having with all this gear. When I used a silicone baking mat my cookies and biscuits came out perfect. Uniformly golden and exactly regular, fluffy biscuits. Sugar cookies are exactly how they should be, soft but not sticky, crunchy but not crunchy. I love my baking mats and would highly recommend them to any baker. I was actually looking for a brick when I came across silicone mats and decided to give them a try. I'm glad I bought the rugs. A small detail, the mats are about an inch wider than my baking sheets, but that's not a problem for me. There are about a dozen cookies per batch of dough, so they fit really well. I always end up with 2-3 cookies too many for the pan, now I have 5-6 instead because I don't put the cookies in the slight curve where the mat goes over the rim of the pan. Everything is fine, my second batch of baked goods has a few more cookies. Feedback and questions constantly prevent cutting carpets due to the fiberglass weave between the silicone layers. So cutting carpets is not good. I'll admit that the width of the mat, being slightly wider than my baking sheets affects my OCD, but don't cut the mats. It's so easy to clean. I rinse the carpet under hot water and that's all it needs. Then I wipe the mat down with a clean damp cloth and a clean dry towel and that's it. Now for the location. hmm... . I ripped open the box of mats because the mats were very tight in the box so that's not an option. I use an empty 1 gallon plastic box which is perfect for storage.
