Slow cooking has changed since I last tried it

When I moved in about 5 years ago I got rid of my old multicooker pots. Earlier this year I became interested in replacing them because I discovered a great cookbook on slow cooking Indian food. I chose it among the offerings in the 5 qt size range for a number of reasons. I prefer a removable insert that can be used on the hob rather than models with multiple settings and additional electronics that could fail. This is very handy for frying food initially, although I think increasing the temperature of the pan will speed up the cooking cycle. I also find it easier to cook at home. I cook a lot of legumes and spicy vegetarian foods, and these foods almost always taste best when chilled and reheated before serving. I can do it in this pan. Another post-cooking use is in cooking foods that require it to reach their proper consistency, as in some bean recipes. I was glad that the lid creates a very good seal. There is a small hole in the lid, but very little moisture escapes through it. I don't know, but maybe that's why I need less water than most recipes call for. I wish the cable was longer. I can't use it in the most convenient place in the kitchen because the cord is too short. Although there is a non-stick coating on the inside, I have found the non-stick coating to be more reliable when applied with a light coat of coconut oil. It seems to me that this multicooker is more expensive than others and I don't know why. But it always seems to come at a reduced price. I should have gotten the features I wanted.
