This is the fourth time I've bought a version of these pans and not because I need to replace them. The original 8" pan from 8 years ago is worn but still works. I bought the large one for the house and then this complete set for our cabin. I also bought a 12" pan for my mom to replace her old flaky Spoiled Chef pan. They are relatively heavy and the finish has held up very well for us, we have only hand washed them and used wooden or silicone utensils. Although my husband is definitely guilty of occasionally using a fork to flip things! You should stack them with something in between or use a griddle to avoid metal to metal contact. While you can use them on low heat without fat to cook sticky foods like eggs, we still use a thin layer of oil to make this easier and for better flavor. I didn't see any benefit from the red dot in the center, but they're great pans nonetheless.
