It's easy to upload photos from Android S7, but can you set up folders on a flash drive?

I just started to transfer pictures from Android S7 phone to flash drive, which is very easy if I follow the instructions, but I have many thousands of pictures. I bought 128GB and I have a question, I don't want to just upload them all to a flash drive where I don't have them in any folder. Can you set up folders on the flash drive? If you can't that would be a real shame, I have to go through thousands of photos to find what I was looking for.
