Makes wonderful bread

I'm making more and more bread, mostly using Artisan Bread recipes in 5 minutes a day, and it's made everything so much easier. Many recipes work best with steam, steam, or either. While the first two add moisture from the outside, this keeps all of the moisture in the dough nearby and uses it to create steam. The result is a good spring and a rich crust. The size is just right for my needs (I usually make 1 or 2 pound loaves) and the loaf comes out well. I'm using parchment to make this even easier, but I think this will work just fine either way. Once you've preheated the bell, you'll have a hot lid to keep it handy but secure, as well as a hot base to place the dough on and then bring it all together in the oven. I find that with a clear stovetop (always a safe spot for hot food) and/or a well-placed second shelf in the oven (again, a safe spot for a 450-degree lid) I can safely store the preheated lid while I cook add the dough. Recommended for every enthusiastic baker.
