Very good pans, great price.

I have been using AllClad pots and pans for over 10 years and I am very satisfied. They are family and get the job done night after night with no problems. For those of you who don't know, Cuisenart MCP is Cuisenart's attempt to reproduce the superior cooking characteristics of AllClad pans at a fraction of the price. The bottom line is that they succeeded and even improved on AllClad's already excellent design. I bought this particular pan to replace the tagine my daughter now has at home. Although it doesn't look like a tagine at all, it's perfect for this style of cooking. The main pan is low and flat like a tagine. The lid fits snugly so that the dish can be gently steamed at very low heat. It makes the right amount of food for 2 people. But. This pan is much more versatile. Due to the aluminum core, the heating is very even. It is ideal for searing meat, then making sauce on brown pieces and then slowly simmering. This pan is great for thinning sauces, and the low sides make it easy for steam to escape. It's also great for steaming mussels. I used it once to make a small roast, starting from the stovetop until browned and then finishing with a pot roast in the oven. It is perfect for this and no long handle disturbs. My wife also made breaded potatoes and it was perfect. So you can fry, stew, stew and bake everything in this pan. This is a very handy kitchen tool. Keep in mind that a 3 liter tank is a bit small - it's good for 2 people but not big enough for a family. I love this pan so much that I bought the 5 liter version to serve a larger crowd. I said they improved the AllClad pans, so I guess I should explain. The price is obvious. To keep the price down, these pans are made in China. If that bothers you, buy an AllClad Made in USA. Another improvement is that these pans can be used on an induction burner. My old AllClads can't do that. However, the biggest improvement in these pans is their simplicity. Cuisinart MCP pans have a flared rim. While it doesn't seem like much, it makes pouring liquid from these pans a lot less prone to spilling or running down the sides. 1-2cm higher. That would be nice, so Quisinart, if you're listening, here's my suggestion. In summary, these are great pans at a surprisingly good price. In fact, they are better than they should be in this price range. I'm almost sad to say these are the same fine AllClad pans that I've loved for many years. To be honest I bought these pans to try, hoping to give them to my daughter and buy AllClad versions for myself. Now I'm rethinking that strategy.
