Good and accurate if you're into commercial cooking

The bad news first is that there are a lot of squeaks that get a bit annoying after a while. Some food grade silicone greases reduce the noise but do not completely eliminate it. One star deduction for that. But otherwise fast and accurate. I have 4 of these and use them regularly. I see a lot of reviews insisting they aren't accurate or that they leak or whatever. It looks like these people came in with very unrealistic expectations. This is a commercial device. Like most other commercial devices, it doesn't just plug into your home kitchen. Commercially available recipes are formulated for the entire process, including the equipment used. With this dough dispenser, it works for dough of a certain consistency. Too thin and it will leak. Too thick and not flowing fast enough to fill the pipette before the plunger closes it. I've had to reformulate my recipes for cakes, waffles, pancakes, etc. to work properly with this dispenser, but it's worth it for the time savings. Most of the time it's just a matter of adding some extra liquid, plus some xanthan gum and either modified starch or cornstarch depending on whether I'm trying to thin or thicken the batter. The bottom line is, if you're buying this to make making pancakes, waffles, and brownies easier, take the time to formulate your recipe to work with both this dispenser and the kitchen equipment you use. And if you're looking for something that works with thinner or thicker dough, there are other types of dispensers designed for the purpose. Make sure you're using the right tool and process and you'll get great results.
