These pots and pans are the best set I have ever had. I've always had non-stick pans and have put off buying stainless steel for fear of cleaning/keeping them in good condition, even though I REALLY dislike non-stick chemicals. Now I regret not switching years ago! They're so easy to use with a non-stick coating: place them on the heat for about half a minute, then add a cup of regular olive oil (not extra virgin). Once a layer of evenly distributed oil appears on the bottom of the pan that shimmers, you're ready to cook! They clean up great. If I come across anything that's burnt, like drips of meat or bits of egg, I just soak them in soapy water for about an hour. No problems so far - they are as clean and beautiful as when you first unpacked them. Follow these steps and you won't have any problems. My only complaint is that they are significantly heavier than non-stick pans, but I'm happy to go with a heavier pan knowing it's not full of Teflon chemicals.
