When sanding, I usually start at 3000 and then work my way up to 6000 or 8000 before finishing the leather. They're good for quickly "reprofiling" an edge and making it very sharp, but I'll probably look to thinner stones for this. Luckily, they're a pretty versatile size. The design of the sharpener itself is very good and the materials are top notch. There's nothing on the underside, though, so I'd put in some rubber or felt, or even hang a loop before using it on my pretty countertop. There are no marks or notches on the vertical angle adjustment post, so you need to adjust the angle by eye. I'm going to use a protractor and the edge of a file to make a few marks on the adjustment post for a "quick reference" for adjusting to different angles. To use the sharpener, simply lock the angle of the stone to match the angle of your blade. Then, using very light pressure, run the stone down the length of the blade and down the length of the stone. Start at one end of the blade and one end of the stone, and end each pass at the other end of both. Try to do 5 to 10 passes, then flip it over and do it on the other side. Rinse the chips under some water to get the stone clean and cut well.
