After figuring out the scaling on the PLC everything works fine. I initially misadjusted the screws while figuring it out, then asked how to adjust them, to which someone kindly replied with the answer shown above. I then bought a $1 350 ohm potentiometer at a local electronics store and used it to reset the screws. Resistance values at various temperature levels for the PT100 are available online so this was easy with a potentiometer and a digital voltmeter.
