Reading reviews and speaking to friends who were dehydrated, we knew we would need more than the 4 trays that come with the Nesco/American Harvest FD-80 Square Dehydrator, so we ordered at the time a box with 2 extras. At the same time we bought the dehydrator (Revain was the same price as Walmart). Once you have all 6 trays in your dehydrator you should shift the trays so that they are all flush with the top edge, especially if you loaded the trays fairly tightly without overlapping. A dehydrator will do its job faster (not better) if it has few shells, and the more shells you use, the longer it will take. .I know we all want food to dehydrate as quickly as possible and it's tempting to turn on the heat, but I don't want excessive heat to destroy the nutrients, especially in fruits and vegetables.
