Learning curve, but worth it.

I was skeptical at first. It sounded too good to be true. But now it's my favorite cooking utensil. Recently widowed, I've learned to minimize and adapt my cooking to my eating habits. Honestly, I hate cleaning and clutter, which is why I threw away a lot of old cookware that wasn't "induction-safe." Old gas burners are rarely used and I've found my kitchen to be a safe place to be. I was disappointed to find that the digital settings didn't match the actual cooking temperature. but it only takes one pot of stew to realize that "slow simmering" is achieved at 175 degrees and is fully repeatable. You must understand that you cannot use your old trusty digital thermometer with a long probe when the device is on. You must press "Pause" to read the readings and then "Start" to continue cooking. This is because the magnetic field turns off the thermometer. The book doesn't say that, so don't throw away the thermometer. It's not dead. My only concern is that I received the 1500w model and not the newer 1800w mod. I was afraid my old kitchen wiring wouldn't handle 1800 watts. That was before I knew there was a power cap setting in the control panel. The only difference really is that NuWave announces 5 degree time steps on the new one, reversed 10 degree steps on my old one. You still need to use a thermometer to check if small deviations matter. Your old cast iron cookware that you could buy by hand will find a new life. And Kitchen Aid offers a very affordable range of non-stick, very high quality stainless steel pans and saucepans that are very easy to clean. I bought a new wok "Joyce Chen" and am very satisfied. -pp
