
We have had Pavoni for several years. We've tried again and again, with varying degrees of success. The grind is very finicky, we tried a few from a local cafe specifically for Pavone but were unsuccessful. We then bought a burr mill and were able to try out several degrees of grinding. Let me add that tamping pressure is just as important as grind size. Our local coffee maker repair shop recommended that we tap the bathroom scale to maintain consistency. After doing that, we tried several rammers from 10 to 35 pounds with different grinds. After drinking several pounds of coffee for some time, we finally made it! Only about 30 pounds and yes I pull the scales out daily they are light :) This is a machine for those who want to fully master the art of espresso making by hand. It's a grinder, it's a tampon, it's water, milk, everything to make a great coffee drink. We also have a machine that sits unused on the counter. In this way you can prepare an excellent espresso. You can't rush things, it's just not possible.
