I've been making sourdough for several months and have been experimenting with my own leavening towels, which have been kitchen towels with a smooth texture. I usually cover them with some bread flour to reduce sticking. There were two problems with removing the dough from the proofing basket: 1) the dough stuck to the towel and 2) because the towel was not attached to the basket, it took three hands to hold the towel and scrape the dough into the baking pan. If you also follow your advice of dusting the towel with rice flour, the sticking problem will almost go away. Now the dough can simply be pushed into the baking pan by one person.
