Splintered - Baking Tools & Supplies

I've used this several times with wetter batter. For tidying up (to avoid mold) I usually add some flour and then brush (before the dough hardens). After the third or fourth repetition of this process, I noticed a split. It goes in the trash.

Good Bakeware Basket

I am using the insert that came with the kit as there are "slivers" of the product on the basket itself. The base works well and the dough doesn't stick to it after dusting it with flour. However, you don't get the impression of the basket on the loaf :( The consistency of the bread is definitely better than when tested in glass bowls. Totally satisfied with the basket. Very good customer service.

Game changer for your crust

If you bake bread and put it in a bowl, stop now and buy a set of these baskets. I was wondering why my sourdough crust wasn't great before and why I didn't take that chewy dough outside to pound before baking. This is because I need reed baskets to dry the dough balls. Now my easy recipe is crispy and crunchy just how I wanted it. I used the baskets exactly once without inserts. The spiral shape didn't work for me and the PITA cleaning left flour in the fabric cracks. Now I hand wash myโ€ฆ

Non-stick and easy to use

I've been making sourdough for several months and have been experimenting with my own leavening towels, which have been kitchen towels with a smooth texture. I usually cover them with some bread flour to reduce sticking. There were two problems with removing the dough from the proofing basket: 1) the dough stuck to the towel and 2) because the towel was not attached to the basket, it took three hands to hold the towel and scrape the dough into the baking pan. Poor quality product

I am an artisan baker with many years of experience. The dimensions of the basket do not correspond to those indicated. Measure 3 1/4 inches high (not even close to the advertised 4 inches) and 9 7/8 inches at widest diameter. Not as well constructed as my other baskets. The vine had very sharp, raised edges, as if warped or crushed prior to assembly. The workshop didn't care. The long sharp edge could grab the dough if not sharpened first. May plan to use sandpaper or return the product. Theโ€ฆ

Great for checking out your master crafters!

I use this to rise my homemade bread and it works great. It's very well constructed - sturdy and dense enough to even hold water for a while! Sprinkle the inside with flour and place a ball of dough inside. If your dough is very fluffy or wet, it may stick to it no matter how much flour you use, but usually after folding, your ball of dough will be firm and should come out right away. Depending on how "firm" my dough is (mainly due to the protein content and the creases), I flip this one andโ€ฆ

Just make sure you order from Saint Germain

I find that a good or bad banneton depends a lot on which supplier you order from. The first one I ordered was bought in Saint-Germain. It's a decent banneton at just under 10 inches in diameter. It is perfect for my needs (tartine bread). Four stars for the first banneton ordered. Then I ordered another one, but didn't pay attention to the seller. It turned out to be another seller (Cleansed) and shipped from China. It arrived surprisingly quickly (less than 2 weeks), but the product is veryโ€ฆ
