They are light and flexible. I just received them and used them to cut fruit and veggies. Knives easily cut vegetables. But metal blades are very thin. Don't think they can cut anything with bones, like fish bones or chicken wing bones. The blades are sharpened so you can feel the burr. However, the metal material looks soft. Wouldn't use it for grinding. I received the package two days later than ordered from Revain. It has no splinters of wood, no metal issues protruding from the handle as others have pointed out. The handle length may be a little short for big hands. I don't know Rockwell hardness. But it is very easy to resharpen with a 3000 whetstone and straighten the edge with honing steel.
