They are light and flexible. I just received them and used them to cut fruit and veggies. Knives easily cut vegetables. But metal blades are very thin. Don't think they can cut anything with bones, like fish bones or chicken wing bones. The blades are sharpened so you can feel the burr. However, the metal material looks soft. Always wanted a set of Cutco knives but they are so expensive. These knives changed my mind about expensive knives. They are very sharp, easy to use, the ergonomics could not be better.
