Amazing Cutlery & Knife Accessories Slicers

These knives are amazing when used properly. They are incredibly thin and flexible as they are made of soft stainless steel. This means they can bend without breaking or chipping, and their thinness can cut through anything like a razor, since food won't be pushed apart by a thick piece of steel. But because the steel is thin and soft, the edge can roll and dull if you stab hard with it. Sharpening can straighten the edge back into a straight shape, but re-rolling weakens the edge and can dull it. The knives cut well and don't dull for long. The cutting action feels very, very good as they do most things quickly and excel at delicate things like tomatoes or onions. I got them at the same time as the good Shun knife and to be honest I use them more often. They cut just as well as the Shun and I don't have to worry about damaging or sharpening the super hard steel. The grips are a bit rough and not sealed, but a little oiling and maybe a bit of sanding will make them perfectly usable. As long as you don't constantly soak them in water, I'm not worried at all about their durability. These knives are not "cheap", they are inexpensive. If you know what you're doing (or learning) these are great, great buys. They have become my daily riders and I only take the Shun when I know I need a sturdy blade or when looks are important.
