Ideal for hard cheese chips.

I'm having an affair with hard cheese. It is true. I put almost everything in cheese. Currently my favorite is Asiago, which I buy in pieces and rub in as needed. (I prefer aged Asiago, which is firmer than unaged varieties.) I like the large chips in this particular cheese, and I use this grater for just that purpose. The choice of grater depends on the cheese you are grating. Soft cheddar or provolone works best for shredding or larger chunks, depending on your intended use. Very hard parmesan should be finely grated as the flavor is stronger. However, Asiago, which I like, is a cheese that needs a medium-sized grater, for which it is perfect. It produces fine shavings of good size, about 1 inch long. There are a few smaller pieces and a few larger pieces, but mostly it's a good-sized chip that lets the flavor of the cheese come through without becoming overpowering. This grater has good, durable rubber. handle and comes with a plastic cover for the top of the grater when not in use. The lid is easy to put on and protects your fingers from cuts when you take them out of the dish drawer. This is a lightweight grater that is easy to work with and easy to clean. It's also easy to store, being much smaller than traditional graters and fitting right into your utensil drawer. I definitely recommend this grater for aged or semi-hard cheeses. This is exactly what I was looking for! I received this item in exchange for an honest review. Opinions, experiences and photos are all mine.
