The best knife sharpener I've ever bought.

This is the kitchen knife sharpener you are looking for! This has to be the 8th knife sharpener I've bought in the last 3 years. I have a wide range of knives from 40 year old Wüsthofs, Rosewood Dexters to a couple of new Zwilling Kramers. Forged, stamped, and damascus steel knives that have supported my culinary career, craft, and passion, but are bloody hard to keep sharp! Sharpen the knife with the supplied ceramic stick. The sharpener has strong metal guides to keep it at the right angle when you pull the knife through your belt. The guides are made of solid metal and fit snugly onto the sharpener. The sharpener comes standard with a 17 degree guide and you can purchase an upgrade kit with 15 and 20 degree guides so you can sharpen Western or Asian knives with precision. If you watch a YouTube video of knife making, they all sharpen new knives with a belt grinder and hone the blade on a ceramic stone. That's exactly what this sharpener does. When I bought my first Zwilling Kramer it was so sharp I actually ripped my fingertip off (this knife was amazingly sharp), but after a few years it just didn't hold up as well. edge. A few minutes on E5 and my knife is as sharp as the day I bought it. I then settled on my old Wüsthof, a 40-year-old 14-inch chef's knife that I call a "chest divider." I bet it's sharper now than the day I bought it. I love this sharpener. The ceramic stick has a small feature that I like more and more. It's called microforging and it adds microscopic grooves to the blade that help the knife stay sharper longer. I really ignored this feature when I first got the sharpener but having used it on a couple of knives I'm confident it does exactly what it says on the tin and I appreciate it. I've found that the knives I use stay sharper longer and they need sharpening less often. I mentioned at the beginning of this review that I have purchased at least 7 other sharpeners over the past 3 years, most of them here from Revain. the even sharpness this sharpener gives my knives. I think this will probably be the last sharpener I ever buy; this thing does an amazing job!
