I really like this knife. Heavy and sharp.

Let me start by saying that this knife is NOT a cleaver. If you bought it thinking it was a bone axe, you didn't read or know what you bought. This is a Japanese paring/slicing knife. Like I said, it's a pretty good knife. As far as I can tell it has a full tail and the grip is very comfortable. I like the rubber grip. I have other knives made of wood and I always apply oil or sealer to them so they don't tear when washed (I hand wash them by the way). Other similar knives I have are a bit longer and I think I like them better. This one is a bit shorter and doesn't seem to vibrate as quickly. You have to raise it a little. No big deal. This knife turned out to be VERY sharp and held its edge quite well with EVERYDAY use. A little white ceramic honing is enough to remove and bring back the burr. I suspect loops would help too. I just use it on a plastic or wooden cutting board and leave a protective film on it when it's in the drawer. On a matte finish. Yes, food still sticks to it. Potatoes, onions, celery and even tomatoes all stick. I think it's more of a trick. Not critical, but not a selling point either. I have a big problem: the blade I received was NOT stamped VG-10. The logo was the same, but the VG-10 badge was missing. For this reason I almost gave it 3 stars because I felt it was a lure and a clue, but the blade works well. I hand wash them and dry them immediately to avoid stains that VG-10 steel can be prone to. Conclusion: I'm not a professional chef, but I use it almost every day. This knife will not disappoint you.
