The Pro Doughs I used to buy were thinner so could be sharpened a little making cutting veggies a lot easier. I use this kitchen tool most often for slicing and scooping vegetables. Thinner blade blocks were ideal. A thicker blade is more difficult to use; especially on hard vegetables like carrots. I gave away a lot.
