Protects molds from cuts and scrapes but effective enough for pizza crusts. A little more pressure may be required, making the grip very comfortable even for small hands, those with pain may prefer the sharpness of OXO stainless steel. I just bought a replacement and gave away some Christmas gifts. We use aluminum pizza screens and this left little dents in our old screens so we're cutting on a different surface now. A steel blade would actually cut through the surface of the screens and certainly result in the toxic aluminum penetrating the food! An excellent choice for those with young children.
