I read an article about this tradition, I should have had one. I bought a dome, cheese and a 27 year old balsamic. The instructions suggest spinning at 45 degrees Fahrenheit. So I let the cheese sit for a bit after taking it out of the fridge. This worked perfectly, producing clove-like, cheesy petals. Soon our guests started making their own curls to take the plunge. As mentioned in the article, dipping those tresses in balsamic is like painting rose petals red or, as they say, gilding a lily. We have a new Whole Foods Market in town so I'm hoping to find some cheese nearby.
