
These trays are perfect. I've worked in a bakery for many years and while it's not the same brand [ours were much, much older], they bake just as well, if not better. I use coconut oil to smear things like brownies, which come out perfect, nice, and tender with a small bite of about 1/4 inch. There are no sharp edges here! I even have 4 of these now in 1/2 sheet sizes and I'm going to make a three layer cake with them for 300. I also use them for everyday cooking. From chicken strips to fish wrapped in puff pastry, everything comes out perfectly browned and never burns. I've never had a problem with these pans sticking. But I'm always either fat or paper or silpat. Anyone who wants to improve their game in the kitchen should do so anyway. I just wash them with the regular side of a sponge with hot water and soap. The "scratched" side of the sponge is more likely to leave marks.
