This product is absolutely fantastic and the customer service is the best I have come across on the internet. I've just decided that tonight I'm going to throw away my three piece castles in the air and utterly useless plastic cup liners I used before. I will also add some photos of my current enzymes. I've been using the Easy Fermenter Wide Mouth Lid Kit with a pump for about 2 months now and am very impressed. I used Ball Mason liter and half gallon cans with these lids for reference and comparison. I've made several batches of kimchi, beet kvass, and apple cider vinegar and the process couldn't be simpler. After 7 days the kimchi was ready and after 10 days the kimchi was perfect. I'm planning on making water kefir again as I haven't made it with this system before and I expect it will work great. The design of the lid is simple and straightforward and therefore very easy to clean. All parts are separable to prevent mold growth on the seal or under the date dial. I put the hard plastic on the top shelf of the dishwasher, but I don't want to expose the rubber seals to as much heat. It's been said that you don't need to use a pump to start fermentation, but I do and I'll tell you why. While I'm sure the oxygen will be driven off quickly, I want to remove as much of the jar as possible. Using the pump to begin with also helps push any air bubbles that may be trapped beneath the food substance to the surface of the brine, and the vacuum also causes the dissolved gases to expand and escape from the water to the surface. The effect is actually pretty cool. After inflating a bit, I usually spin the can like a washing machine to remove more of the trapped bubbles, then inflate it again just to be sure. There are two issues I would like to point out and a suggestion from the manufacturer. Firstly, the seal on my pump came loose last night and cannot be repaired. However, after reviewing some of the questions on this list, I realized that Nourished Essentials will be releasing a replacement pump as it is not sold separately. They asked me to go to their own website and give my address, which I did. They were the quickest to reply to say thank you, to inform that my replacement will be processed in 1-2 days and also to throw further cover for the inconvenience. This is amazing to me and deserves my dedication. Second, I had a hard time disengaging myself a couple of times, but that was my own fault. I have a habit of tightening my eyelids and in this case I did. Since then I've kept my herculean potential for addiction in check and it hasn't had a detrimental effect on the fermentation. Third, I think it would be beneficial to add a "moon" ring on the lid. There are several longer lasting enzymes (months to years) that I would like to try and add. It's not even remotely a complaint as it's completely unnecessary and there are simple alternative solutions. If you are interested in fermentation, don't hesitate to buy this system. This system is literally progress and simplicity in one compact package. If you need another boost, these guys may have used up the entire 2 cubic inches in their shipping container, which made me happy even before I had a chance to use the lids. I hope that many companies will be at least half as efficient as these guys.
