This Anova replaced the $48 Geryon that I loved until I accidentally sucked up a lot of liquid and fried the electronics. I thought Anova would be great fun. The first task I gave him was to seal the two sides of the salmon portions. A few weeks later I went to one and found that it had lost its seal and was covered in ice crystals. Same story with all those expensive little packages. With the new pouches, I did a few experiments to get a good seal, like straightening a rubber support bar that didn't seem to fit well and pushing down on the lid. The technique I chose to use was to first run an empty heating strip to heat it up and then use the pouch to press the seal button 3 times in a row. If you see a leftover waffle pattern in the melted area, it's not holding the pressure. So this is a lengthy hack and really shouldn't be necessary for the price I paid.
