I love making sourdough but making it by hand is a nightmare. That's the thing about this mixer, if you're making heavy batter with it, it won't last long. Check out the video I posted as an example. You can see and hear the machine bend and crack, so it's only a matter of time before it breaks. You need a strong metal case/frame. It's like trying to attach a plastic hanger to a car. Don't want to spend $300 on Kitchen-Aid but want something durable? I just bought a Cuisinart SM-50BC 5.5 liter stand mixer. It costs about $70 more than this product, but the build quality is 200% better than full metal. That is beautiful. flour, salt, yeast. Repetition : )
