As mentioned, the biggest problem with the kit is that you propose to start a recipe and find that half (or all!) of the materials not actually included kit (how hard would it be to turn on the rubber band?). Also, the kit is pricey in terms of content: $40 for a bunch of cornstarch and some gelatin. I think if you have the manual you can get all the ingredients for around $10. The instructions are pretty sparse (there is some interesting content that can probably be understood by most kids). Finally, some recipes involve making caramel, which can cause severe burns as the sugar water gets very hot and sticky. Parents should be aware of these recipes and supervise their children accordingly.
