Review on Pyrex Easy 3 Quart Oblong Baking by Lindsey Martin

Revainrating 5 out of 5

Excellent cooking is a must, close to perfection

I find this to be a very versatile dish that actually beats the more respected materials for some main courses. The upside is that it can be reheated in the microwave, easily chilled, frozen and transported (thanks to the snap-on lid), making it a true kitchen workhorse. They are also nested. The glass is now relatively thick, so two plates stacked on top of each other are probably 1.5 plates high. I've used it on cakes, bread pudding, salads, sweet potato pies and casseroles. Everything cooks well and I like to see the contents from the side, especially when storing leftovers. I've been working on making crispy and fluffy chips perfect for years. I've always used my thick stainless steel grill. But when I needed to cook something for a big party, I used this dish as a substitute. I didn't have high hopes, but it was a great discovery. Potatoes browned much faster and more evenly in Pyrex than in more expensive metal. Now this will be my dish. Perhaps cast iron would be even better, but it's far more expensive, heavier, and more difficult to maintain. The only downside to this generic roaster compared to metal is that it cannot be placed on the stovetop. This dish cleans fairly well, but can also benefit from a good brushing. I probably shouldn't, but I use light wire wool sometimes and haven't had any problems. However, I do feel that they are more difficult to keep clean than a quality non-stick coating. But given the ability to use metal utensils for this dish and the price, I think Pyrex wins. The lid is a big plus, but it's also the biggest downside. It fits snugly, if not very tightly (certainly not airtight) and sinks too far into the bowl so you can't close the lid when the bowl is very full. If the lid was more akin to a Tupperware lid in terms of efficiency, this line of cookware would be perfect.
