. from the 30x canele pan i received was excellent. I used a 50/50 mix.
The quality of the 30 well Canele pan I received was excellent. I smoothed it out with a 50/50 mixture of oil and melted beeswax. The canele rose easily after baking and the bite-sized pieces were crispy on the outside and creamy on the inside. The only problem I had was that the inner rows didn't bake at the same speed as the outer rows and the results were inconsistent. I'll probably split the pan in two to even out the baking speed. Now I want 2 medium sized pans but they don't ship that size to Australia :-(
