Keep Refrigerated When Not In Use

We got this pot because of the material it's made of so we can put it in and take it out of the fridge. Looks great and says what it is. Love! My husband prefers soft, spreadable butter, but he's the only one in the house who loves it, so we eat it slowly. We add a stick to this pitcher and put it on the table (with water) over the weekend, then drain the water and put it in the fridge for a week when not in use. It takes us about a month or more to sort the oil and it stays fresh all the time. We also learned some tricks: when setting the table, take the oil out of the jar and dry it with paper. Towel, then put it on the table "open" so as not to put it in the water, and take it out when eating. We're at a well, so we use pre-boiled water, which is cool for the pitcher and seems to keep it fresher than the vinegar mix that others have suggested. Use only salted butter and cut into cubes to add to the pitcher and then, with the wax paper wrapper on top, mash with your hand in the jar after the butter has softened on the table for an hour.
