Fantastic knife at a great price!

It's hard to imagine I got this knife but for the size of the blade I couldn't find a better price. The first impression is fantastic, looks great, feels good even for a knife size that is not "too" heavy. It came in a box and was razor sharp. The blade seems to be of good quality, like my German forged knives. The knife itself is not forged, but it is certainly well heat treated, since the blade returns to its original position very easily when bent. It is definitely forged from a high quality blank, has a very fine surface finish and is ground to perfection. The edge of the blade is at an unusual angle as it is ground on the machine rather than polished rather than ground. In any case, it was instantly razor sharp and cut like my premium Japanese Yanagiba knife. The best thing is the wooden handle, I didn't want to let go of this thing once I started cutting with it. It just feels right at home in my hand. I have knives 7 times more expensive that are not as easy to clean as this one. I'm not 100% sure this is a full stock knife, it just doesn't look like it, but maybe the length of the blade shifts the balance of the knife forward. Aesthetics are great, my Japanese knives are better but this is very good. It would have been much better if the back itself was polished rather than sanded, but I think $40 is what you pay for. The bolster is most likely welded on, but is well ground and ground to the thickness of the blade. I hope the blade sharpens easily like my German knives. Actually, this thing is very impressive.

Pros
  • Professional boning knife
Cons
  • Lots of stuff
