I have a 23 quart Presto Preserves Pot and the manual says this is the part I need when I want a weight instead of a gauge. As a newbie to canning, I had no idea what it all meant, but I figured it out quickly and I'm so glad I bought it. To simplify the explanation as much as possible, when I look at the pressure gauge, it's like looking at a pot of boiling water with a thermometer in front of me, and I'm trying to keep that arrow on the dial at a certain temperature. Tightening is like using a thermostat. So when I'm above the desired temperature I know it by the amount of vapor released and when I'm lowered I know it because it stops making noise. Now, of course, I don't measure temperature, I measure pressure, but you get the impression that I don't have to stand in front of a cannery and constantly look at a dial gauge. Once set to the correct pressure, this rocks back and forth making a rhythmic noise that as long as I'm in my ears I know what pressure I'm under to be able to use my cans freely. , cut things or perform other nearby tasks. The cannery comes with a one piece 15 pound regulator, but I'm at under 1000 feet so I need 10 pounds instead of 15. Each of the three pieces of this regulator weighs 5 pounds. So I took off the ring and got the 10 pounds I needed.
