Hard to believe I bought my Toddy Maker 14 years ago, one of my first Revain purchases! Without a doubt, this is the tastiest coffee I've ever had. The carafe broke many years ago (thanks to my dog) but I still use the plastic tea leaves, original rubber stopper and original filters. It's hard to believe that this whole contraption is so simple and easy to clean (ie no moving parts, no metal to rust). Not much has changed in my recipe. I coarsely grind 1/2 to 1 pound of very fresh coffee, add 9 cups of filtered water and let steep at room temperature for 1 hour. Be sure to mix ground coffee with water so it is fully saturated and there are no air bubbles. Be very careful with very freshly roasted coffee as it releases CO2 and can "bloom" over the lid of the container if CO2 bubbles out. Once I'm sure all the gas is gone and my mixture is thoroughly mixed, I cover it with a plate and let it sit in the fridge for 24-48 hours. Mostly just for the night because I'm too impatient and want my toddy coffee. I just want to point out that I've used cheap coffee like Maxwell House and it still tastes great, but pre-ground coffee for hot drip coffee makers takes a bit more water (because finer grinds hold more water) and it takes a lot more time to blend into to drip down the decanter. Since my carafe is broken, I just use a normal glass jug from the supermarket to empty it. Manufacturer Toddy fits well over it. It usually takes 30-60 minutes to drain all the coffee into the carafe. I usually toss my ground coffee in a composter (a good source of nitrogen for compost). Thanks to the cold brew process, the coffee tastes extremely smooth and very aromatic, without the bitterness of hot coffee. I suspect hot brewing extracts more bitterness. If you use good quality coffee, you can see the coffee's essential oils on the surface of the brewed coffee. As for the caffeine, I feel like there is no difference between the caffeine content of cold and hot coffee, but that's my subjective opinion. I like very strong coffee, so I mostly drink straight coffee. However, I sometimes add 1-2 parts boiled filtered water to 1 part toddy when I want a hot mug that doesn't have a punch. To clean the filters, I soak them in hot tap water with a couple of plates. soap and some chlorine bleach for about 10 minutes; I rinse the filter thoroughly with cold water, then put it in the microwave for 1 minute to heat it up and finally let it dry on a towel in the kitchen. I've found that microwaving eliminates the smell of bleach and helps the filter dry faster. I was bored and revisited my old Revain purchases and was happy to see that Toddy still makes these things and decided to post this review. Hope this helps some people on the fence to buy it.
