Try one of these before you spend big bucks on knives. This is my fourth Dexter knife. I'm not a knife expert, but I would recommend them for almost anything.

You buy a Dexter because you know what a Dexter is. If you know, you know. It's a Dexter knife. Engineered for functionality, not fashion. These are work knives.

I use Dexter knives at work. Bought for my mom because she thinks only "professionals" should sharpen knives. I sharpen them for them once a year and they always stay sharp.

I also have a Mercer 8 inch hollow ground kitchen knife and its handle is much better for my larger hands. I think the Dexter has a better blade but they are both very nice.

I love this Dexter knife. I have had their bread/serrated long knife for over 20 years along with what I call their flat butter knife. Hope to buy more. Like I said, I love Dexter Knives.

If you know these knives then you know it. I used them when I worked in the grocery store. They are sharp, strong and inexpensive. My only problem is that they get boring pretty quickly. I recommend not letting them air dry, but rather wiping them down to slow the process.
