Missing "essentials "

I have invested in a professional chef's knife and paring knife, but I was missing a knife that could cut meat without crushing or tearing it. I wanted to buy a quality serrated knife, but the reviews for this knife caught my attention. It didn't disappoint. So far I've used it for tough cuts like flank steak and pork tenderloin, as well as fragile foods like meatloaf and salmon, and I've been able to cut thin slices with no resistance. It feels very solid and the quality and construction appear to be top notch. It's a long knife so it took a little getting used to, but it could be useful for holiday poultry. I'm taking back a fifth star only because I haven't used it enough to determine its durability and how well it holds its edge before it needs to be sharpened.
