These edges are *sharp*.
When they stamped out this stainless steel they did not do any kind of deburring. If you run your finger along the edge you could probably cut yourself. I hit the edge with a sharpening stone to take off the burr all the way around and smooth it out. Temp seems close enough. Check it later with a good digital meter. Good scale and quick read color zones.
