I have been reluctant to use Silpat mats as I am a parchment lover and was concerned about browning the cookies on the mats. There may be a little less browning, but I didn't notice any difference in taste. More importantly, after a massive batch of holiday baking, I can say: *they clean like a dream *they cool quickly between batches (this can be an issue with cookies that need to cool completely on a tray - maybe you have to check it out ).* I helped the environment without skipping at least 2 dozen half sheets of parchment paper. I will certainly continue to use parchment paper for certain tasks like cakes and meatballs, I believe all my cookies are made on mats now. .
